2 of my favourite summer tomato recipes

You just can't beat the taste of a home-grown garden tomato, and my garden is over-flowing with them right now! So I thought I would share with you a few of my favourite recipes to use up all of those ripe yummy tomatos. Even If you don't have your own garden, there are plenty of locally grown ones available at Farmers Markets, or even your local grocer.

Angel Hair Past with Sauteed Cherry Tomatoes, Lemon & Tuna from Fine Cooking is a quick, easy delicious recipe to use up the cherry tomatoes from your garden. Tomato-Corn Salad uses all the great flavors of summer....sweet corn, fresh tomatoes and basil. When corn is at it's peak, you don't even have to cook it first! Just cut the kernels right from the cob and toss in the salad. How easy is that?! This salad is so simple to put together and makes a great side or a dish for pot-lucks. Get the recipe here.
